For travellers who like to eat well on the trail but keep their backpacks light. Over 300 recipes, from beverages to making your own yoghurt and bread to main meat dishes to desserts and snacks. Though there is a decided bent toward healthy eating (naturally!), no special ingredients from the health food store are required. Here's a sample:Turkey Loaf- 1 lb. ground turkey
- 1/2 cup breadcrumbs
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup milk
- 2 eggs
- 1 tablespoon soy sauce
- 1/2 teaspoon sage
- 1/2 teaspoon marjoram
- 1 teaspoon black pepper
- 2 tablespoons butter
- 1/2 cup white wine
- At home: Mix all ingredients thoroughly. Pack into a greased 9 X 5 loaf pan and bake in a 350 oven for 1 hour. Baste with butter and white wine while cooking. Cool, slice into 8 slices, and wrap each in foil. Freeze until needed.
- In camp: Eat slices of turkey loaf cold for lunch, or serve hot with rice or noodles.
