 Description:
Favorite Recipes of America: Salads Including Appetizers

Condition and Description: Very light cover wear, surprising for a 40 year old cookbook. There are some light stains on the flyleaf, and some tanning to pages from age, but overall, very good condition. Binding is tight. The book appears rarely, if ever, used.

"Americans love salads. In fact, man wouldn't think of serving a meal without a salad. Salads can be a meal in themselves, one course of a meal, or a little side dish. They are not only lovely to look at but are an important part of the diet.

Salads seem to be the perfect natural food for weight-conscious Americans- even thought some salads can be rich and hearty. Salads are usually easy to prepare. So they re the natural answer for the homemaker on days when she is busy and doesn't have much time to devote to preparing a meal.

In this collection you will find salads galore. The pages are packed with recipes of fruit, vegetable, meat, green and molded salads 0 plus those from foreign lands.

Roman emperors dined on dressed lettuce. The common folk dipped their chicory and lettuce in salt; so from salata, the Latin word for salted, came salad.

The custom of mixing greens with oils and herbs quickly traveled from Italy and early Greece to Spain and France, where the people lovingly adopted it. In time, the French and Spaniards introduced salads to America.

The recipes in the "Salads" edition of Favorite Recipes Of America were selected from the more than 100,000 recipes in my files to represent regional cookery at its very best. Recipes have been collected from every part of the United States.

Each of these favorite American recipes was home tested by cooks across the nation just like you. Every homemaker endorsed her own favorite recipe. Her name appears under her personal recipe. You'll treasure the many recipes in this collection which will become you favorites." - Mary Anne Richards, Staff Home Economist, Favorite Recipes Press, Inc.
